Mango Sago is a delightful dessert that combines the sweetness of mangoes with the chewy texture of sago pearls.

- 2 ripe mangoes
- 1 cup sago pearls
- 2 cups coconut milk
- 1/2 cup water
- 1/4 cup sugar
- 1/2 tsp salt
- Optional mint leaves for garnish
Instructions
- Rinse the sago pearls under cold water.
- Boil 4 cups of water in a pot, then add the sago pearls and cook until transparent.
- Drain the pearls and rinse with cold water.
- In a separate pot, combine the coconut milk, water, sugar, and salt, then bring to a simmer.
- Add the cooked sago pearls to the coconut mixture and stir well.
- Cool the mixture slightly, then fold in diced mangoes.
- Chill in the refrigerator for at least 1 hour before serving.
- Serve in bowls and garnish with mint leaves if desired.
