- 8 ounces rice noodles
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1/4 cup soy sauce
- 2 tablespoons peanut butter
- 2 teaspoons lime juice
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds.
- Add the sliced bell pepper, broccoli florets, and carrot to the skillet. Cook until tender, about 5-7 minutes.
- In a bowl, mix the soy sauce, peanut butter, and lime juice until well combined.
- Add the cooked noodles and sauce mixture to the skillet. Toss everything together and cook for an additional 2-3 minutes.
