Instructions
- Preheat the oven to 350°F (175°C).
- In a pot, cook the rice according to package instructions.
- In a skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion and bell pepper to the skillet and sauté until tender.
- Stir in the diced tomatoes, black beans, corn, taco seasoning, and cooked rice. Mix well.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
