Ingredients

  • 1 cup uncooked rice
  • 1 pound ground beef
  • 1 can diced tomatoes
  • 1 can black beans, drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup corn, frozen or canned
  • 1 bell pepper, chopped
  • 1 onion, chopped


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a pot, cook the rice according to package instructions.
  3. In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  4. Add the chopped onion and bell pepper to the skillet and sauté until tender.
  5. Stir in the diced tomatoes, black beans, corn, taco seasoning, and cooked rice. Mix well.
  6. Transfer the mixture to a baking dish and top with shredded cheese.
  7. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
