Ingredients

  • lbs boneless skinless chicken thighs

  • 1 tbsp olive oil

  • 1 cup sweet chili sauce

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 2 tsp minced garlic

  • 1 tsp grated fresh ginger

  • Juice of 1 lime

  • 1 tbsp brown sugar

  • ½ tsp red pepper flakes (optional)

  • 2 green onions, sliced (garnish)

  • Sesame seeds (optional garnish)

  • Cooked jasmine rice (for serving)


Instructions

  • In a small bowl, whisk together sweet chili sauce, soy sauce, vinegar, garlic, ginger, lime juice, brown sugar, and red pepper flakes.

  • Pat chicken thighs dry and lightly season with salt and pepper.

  • Heat olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden brown.

  • Add sauce and reduce heat to medium-low. Simmer 12–15 minutes until the sauce thickens and chicken reaches 165°F.

  • Serve over jasmine rice. Garnish with green onions and sesame seeds.

Notes

  • Chicken breasts, tofu, or shrimp can be used instead of thighs.

  • Add sriracha for more heat, or omit flakes for milder flavor.

  • Sauce can be made ahead and stored for up to 4 days.
