Ingredients

1½ lbs boneless skinless chicken thighs

1 tbsp olive oil

1 cup sweet chili sauce

2 tbsp soy sauce

1 tbsp rice vinegar

2 tsp minced garlic

1 tsp grated fresh ginger

Juice of 1 lime

1 tbsp brown sugar

½ tsp red pepper flakes (optional)

2 green onions, sliced (garnish)

Sesame seeds (optional garnish)

Cooked jasmine rice (for serving)
Instructions

In a small bowl, whisk together sweet chili sauce, soy sauce, vinegar, garlic, ginger, lime juice, brown sugar, and red pepper flakes.

Pat chicken thighs dry and lightly season with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden brown.

Add sauce and reduce heat to medium-low. Simmer 12–15 minutes until the sauce thickens and chicken reaches 165°F.

Serve over jasmine rice. Garnish with green onions and sesame seeds.
