Ingredients

  • 4 ounces salmon fillet
  • 1 cup cooked quinoa
  • 1/2 cup blueberries
  • 1/4 cup diced red onion
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mixed greens


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillet on the baking sheet and drizzle with olive oil, salt, and pepper. Bake for 12-15 minutes or until cooked through.
  3. While the salmon bakes, prepare the blueberry salsa by mixing blueberries, diced red onion, lemon juice, and a pinch of salt in a bowl.
  4. Once the salmon is done, let it cool slightly, then flake it with a fork.
  5. To assemble the power bowls, divide the quinoa and mixed greens between bowls. Top with flaked salmon and a generous scoop of blueberry salsa.
