Ingredients

  • 1 cup coconut milk
  • 3/4 cup sweetened condensed milk

  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin spice
  • 1 cup haupia (coconut pudding)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture into a pie pan to form the crust.
  4. In a large bowl, whisk together pumpkin puree, coconut milk, sweetened condensed milk, eggs, vanilla extract, and pumpkin spice.
  5. Pour the pumpkin mixture into the crust.
  6. Bake for about 45-50 minutes until set.
