Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar.
- Press the mixture into a pie pan to form the crust.
- In a large bowl, whisk together pumpkin puree, coconut milk, sweetened condensed milk, eggs, vanilla extract, and pumpkin spice.
- Pour the pumpkin mixture into the crust.
- Bake for about 45-50 minutes until set.
- Let cool, then layer with haupia on top.
- Chill in the refrigerator for at least 2 hours before serving.
