- 1 cup black beans, rinsed and drained
- 1/2 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/2 cup protein powder
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 1/2 tsp baking powder
Instructions
- Preheat the oven to 350°F (175°C) and line an 8x8 pan with parchment paper.
- In a blender or food processor, combine the black beans, rolled oats, cocoa powder, protein powder, honey, almond butter, vanilla extract, and baking powder. Blend until smooth.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before slicing into squares.
Notes
- For added sweetness, mix in some chocolate chips before baking.
- Serve with a dollop of Greek yogurt for an extra treat.
