Instructions
- Marinate the chicken thighs in a mixture of buttermilk, cayenne pepper, garlic powder, onion powder, salt, and black pepper for at least 2 hours, or overnight for best results.
- In a large bowl, whisk together the flour, remaining cayenne pepper, salt, and black pepper.
- Remove the chicken from the marinade, allowing excess to drip off, and dredge in the flour mixture, ensuring each piece is thoroughly coated.
- Heat the oil in a large skillet over medium-high heat. Once hot, carefully add the chicken, cooking until golden brown and cooked through (about 5-7 minutes per side).
- Remove the chicken from the skillet and let it drain on paper towels.
- Assemble the sandwiches by placing the chicken on the buns and topping with pickles. Serve hot.
