- 1/2 cup protein powder
- 1/3 cup honey or maple syrup
- 1/2 cup almond butter
- 1/2 cup fresh blueberries
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/4 cup chopped nuts (optional)
Instructions
- In a mixing bowl, combine rolled oats and protein powder.
- Add honey (or maple syrup) and almond butter, and mix until fully incorporated.
- Gently fold in blueberries, lemon juice, and lemon zest.
- If using, add chopped nuts and fold until combined.
- Form the mixture into bite-sized balls and place them on a baking sheet.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge.
