Ingredients

  • 1/2 cup protein powder
  • 1/3 cup honey or maple syrup
  • 1/2 cup almond butter
  • 1/2 cup fresh blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup chopped nuts (optional)


Instructions

  1. In a mixing bowl, combine rolled oats and protein powder.
  2. Add honey (or maple syrup) and almond butter, and mix until fully incorporated.
  3. Gently fold in blueberries, lemon juice, and lemon zest.
  4. If using, add chopped nuts and fold until combined.
  5. Form the mixture into bite-sized balls and place them on a baking sheet.
  6. Refrigerate for at least 30 minutes to firm up.
