- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 4 large eggs
- 1 cup milk
- 1 cup bread crumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat and sauté the spinach until wilted.
- In a mixing bowl, whisk together the eggs and milk.
- Add the sautéed spinach, feta cheese, bread crumbs, salt, and pepper to the egg mixture and stir to combine.
- Pour the mixture into a greased baking dish and bake for 30-35 minutes or until set.
- Allow to cool slightly before slicing and serving.
Notes
- Feel free to add other vegetables such as bell peppers or onions for extra flavor.
- This casserole can be made ahead of time and refrigerated before baking.
