- 1 cup dried chickpeas
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon coriander

- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2 tablespoons sesame seeds
- 4 pita breads
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
Instructions
- Soak chickpeas overnight in water.
- Drain and rinse the chickpeas, then blend them with parsley, cilantro, garlic, and spices until crumbly.
- Form the mixture into balls and roll them in sesame seeds.
- Fry the balls in oil until golden brown and crispy.
- Warm the pita breads and fill them with lettuce, tomatoes, and falafel balls.
- Drizzle with garlicky green tahini before serving.
