- 1 package (8.5 oz) corn muffin mix
- 1 egg
- 1/3 cup milk (2% recommended)
- 3/4 cup sweet kernel corn, divided
- 1/2 pound ground beef (80% lean)
- 1 can (10 oz) diced tomatoes & green chilies, drained
- 1 can (8 oz) tomato sauce
- 1/2 teaspoon ground cumin
- 1 cup shredded Mexican cheese blend
Instructions
- Preheat your oven to 375°F and grease a baking dish.
- Combine corn muffin mix, egg, and milk. Stir in half of the corn and pour into the dish.
- Brown the beef; mix in tomatoes, sauce, cumin, and remaining corn. Spread over the batter.
- Bake for 20-25 minutes. Sprinkle cheese on top and bake until melted, about 5 minutes more.

- For a spicier casserole, add jalapeños to the beef mixture.
