Description
Boston Cream Pie Crepes are thin, tender crepes filled with smooth vanilla custard and topped with glossy chocolate ganache, perfect for dessert or brunch.

- 1 cup all-purpose flour
- 2 eggs
- 1 ¼ cups milk
- 1 tablespoon sugar
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup milk (for custard)
- 3 egg yolks
- ¼ cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract (custard)
- ½ cup heavy cream
- ¾ cup semi-sweet chocolate chips
Instructions
- In a blender or bowl, mix flour, eggs, milk, sugar, butter, vanilla, and salt until smooth.
- Heat a non-stick skillet over medium heat and lightly grease.
- Pour about ¼ cup batter into the pan, swirling to coat evenly.
- Cook 1–2 minutes per side until lightly golden. Set aside.
- In a saucepan, heat 1 cup milk until warm (not boiling).
- In a bowl, whisk egg yolks, ¼ cup sugar, and cornstarch.
- Slowly pour warm milk into egg mixture while whisking.
- Return to pan and cook over medium heat until thick.
- Remove from heat, stir in vanilla, and let cool.
- Heat heavy cream until just simmering and pour over chocolate chips. Stir until smooth.
- Spread custard on each crepe, fold or roll, and drizzle with ganache.
Notes
- Let the batter rest for a few minutes for fluffier crepes.
- Strain custard for extra smooth texture.
- Serve immediately for best tasting crepes.
