Description

Boston Cream Pie Crepes are thin, tender crepes filled with smooth vanilla custard and topped with glossy chocolate ganache, perfect for dessert or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 ¼ cups milk
  • 1 tablespoon sugar
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup milk (for custard)
  • 3 egg yolks
  • ¼ cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract (custard)
  • ½ cup heavy cream
  • ¾ cup semi-sweet chocolate chips


Instructions

  1. In a blender or bowl, mix flour, eggs, milk, sugar, butter, vanilla, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease.
  3. Pour about ¼ cup batter into the pan, swirling to coat evenly.
  4. Cook 1–2 minutes per side until lightly golden. Set aside.
  5. In a saucepan, heat 1 cup milk until warm (not boiling).
  6. In a bowl, whisk egg yolks, ¼ cup sugar, and cornstarch.
  7. Slowly pour warm milk into egg mixture while whisking.
  8. Return to pan and cook over medium heat until thick.
  9. Remove from heat, stir in vanilla, and let cool.
  10. Heat heavy cream until just simmering and pour over chocolate chips. Stir until smooth.
  11. Spread custard on each crepe, fold or roll, and drizzle with ganache.

Notes

  • Let the batter rest for a few minutes for fluffier crepes.
  • Strain custard for extra smooth texture.
  • Serve immediately for best tasting crepes.
