Ingredients

  • 1 pound scallops
  • 1 pound shrimp, peeled and deveined
  • 2 cups spinach, fresh
  • 4 ounces turkey bacon, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  3. Add the garlic and mushrooms to the skillet, sautéing until softened.
  4. Add the spinach and cook until wilted.
  5. In a baking dish, combine the scallops, shrimp, cooked bacon, and sautéed vegetables. Drizzle with olive oil, salt, and pepper, then toss gently to combine.
