Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1 teaspoon thyme
  • 1 lemon, juiced and zested
  • 2 cups spinach, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sauté until onions are translucent.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the white beans, thyme, lemon juice, and lemon zest. Simmer for 15 minutes.
  5. Stir in the spinach and cook until wilted.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, blend a portion of the beans and stir back into the pot.
