A warm and comforting 1-pot lemon white bean soup that is perfect for any weeknight dinner.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cans white beans, drained and rinsed
- 1 teaspoon thyme
- 1 lemon, juiced and zested
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, sauté until onions are translucent.
- Pour in the vegetable broth and bring to a boil.
- Add the white beans, thyme, lemon juice, and lemon zest. Simmer for 15 minutes.
- Stir in the spinach and cook until wilted.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker soup, blend a portion of the beans and stir back into the pot.
- This soup can be topped with croutons or fresh herbs for added flavor.
