- 1 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot, cook sausage until browned. Remove and set aside.
- Sauté onion, carrot, and celery until softened, about 5 minutes. Add garlic and cook for 1 minute.
- Add chicken broth, diced tomatoes, cooked sausage, Italian seasoning, and crushed red pepper flakes. Simmer for 15 minutes.
- Reduce heat and stir in heavy cream and Parmesan cheese until creamy.
- Add spinach and cook until wilted. Season with salt and pepper.
- Serve hot, garnished with extra Parmesan if desired.
