- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line with parchment paper.
- In a large mixing bowl, beat butter and cream cheese together until smooth and creamy.
- Add sugar and continue mixing until light and fluffy.
- Beat in eggs one at a time, followed by mashed bananas and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually fold dry ingredients into wet mixture until just combined. Do not overmix.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for best flavor and sweetness.
- Tent with foil halfway through baking if the top browns too quickly.
- For muffins, reduce bake time to 18–22 minutes.
- Store at room temperature up to 4 days or freeze for up to 2 months.
