Description

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line with parchment paper.
  2. In a large mixing bowl, beat butter and cream cheese together until smooth and creamy.
  3. Add sugar and continue mixing until light and fluffy.
  4. Beat in eggs one at a time, followed by mashed bananas and vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually fold dry ingredients into wet mixture until just combined. Do not overmix.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
