Texas Cowboy Stew is a hearty, filling dish combining ground beef, sausage, beans, potatoes, and vegetables in a flavorful, one-pot meal. It’s the perfect comfort food for busy weeknights or cold weather, bursting with bold flavors and easy to prepare.

- 2 lb ground beef
- 2 packages kielbasa sausage, sliced into ½ inch pieces
- 2 garlic cloves, minced
- 1 onion, chopped
- 2 (14.5oz) cans peeled and diced tomatoes, drained
- 4 medium baking potatoes, peeled and diced
- 2 (15oz) cans pinto beans, with liquid
- 1 (15.2oz) can whole kernel corn, drained
- 2 (14.5oz) cans diced tomatoes with green chile pepper, with liquid
- 1 (10oz) package frozen mixed vegetables
- 4 cups of water
- 2 tsp ground cumin
- 2 tsp chili powder
- Salt and pepper to taste
Instructions
- In a Dutch oven over medium heat, sauté the chopped onion and minced garlic until the onion is soft and translucent.
- Add the ground beef to the pot and cook until browned, with no pink remaining.
- Stir in the sliced kielbasa sausage.
- Add the drained diced tomatoes, pinto beans (with their liquid), drained corn, diced potatoes, diced tomatoes with green chilies, and frozen mixed vegetables.
- Stir everything together until well combined.
- Add the ground cumin, chili powder, salt, and pepper. Mix to distribute the spices evenly.
- Pour in the 4 cups of water, bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let simmer for about 1 hour, stirring occasionally.

- Feel free to customize the stew with additional vegetables or spices.
- You can substitute ground turkey or chicken for a lighter option.
