This Taco Mac and Cheese is a creamy, cheesy one-pot dinner that combines the bold flavors of tacos with comforting macaroni and cheese.

- 1 lb ground beef
- 1 packet taco seasoning
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 1/2 cup cream cheese
- 1/2 cup sour cream
- 1 cup milk
- 1 cup canned diced tomatoes with green chilies
- 1/2 cup corn kernels (optional)
- 1/2 cup black beans, rinsed and drained
- 1 tablespoon olive oil
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
- Add diced tomatoes, corn, and black beans. Cook for another 2 minutes.
- Reduce heat to low and stir in cream cheese, sour cream, and milk. Mix until smooth and creamy.
- Add cooked pasta and shredded cheddar cheese. Stir to combine and melt cheese fully.
- Season with salt and pepper to taste.
- Garnish with green onions and chopped cilantro before serving.

- Use ground turkey for a leaner version.
- To spice it up, add hot sauce or jalapeños.
