Description

This Taco Mac and Cheese is a creamy, cheesy one-pot dinner that combines the bold flavors of tacos with comforting macaroni and cheese.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1 cup milk
  • 1 cup canned diced tomatoes with green chilies
  • 1/2 cup corn kernels (optional)
  • 1/2 cup black beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  4. Add diced tomatoes, corn, and black beans. Cook for another 2 minutes.
  5. Reduce heat to low and stir in cream cheese, sour cream, and milk. Mix until smooth and creamy.
  6. Add cooked pasta and shredded cheddar cheese. Stir to combine and melt cheese fully.
  7. Season with salt and pepper to taste.
  8. Garnish with green onions and chopped cilantro before serving.
