- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup water
- 6–8 flour tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1/2 cup sour cream (for serving)
- Optional toppings: chopped cilantro, diced tomatoes, sliced olives
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground meat over medium heat until browned. Drain excess grease.
- Stir in taco seasoning and water. Simmer for 5 minutes, then remove from heat.
- In a baking dish, layer tortillas, meat mixture, beans, salsa, and cheese. Repeat until all ingredients are used, ending with a cheese layer.
- Bake for 20-25 minutes or until cheese is melted and bubbly.
- Serve warm with a dollop of sour cream and optional toppings.
Notes
- For a vegetarian version, substitute ground meat with quinoa or a meat substitute.
