- 1 lb lean ground beef
- 1 package lasagna noodles
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 1 can (16 oz) salsa
- 1 packet taco seasoning mix
- ½ cup sour cream
- 2 cloves garlic, minced
- 1 green onion, chopped
- ½ teaspoon cayenne pepper (optional for extra heat)
- Cooking spray for the baking dish
Instructions
- Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions; drain.
- In a skillet, brown ground beef over medium heat. Add garlic, taco seasoning, and cayenne pepper. Stir in half of the salsa; simmer for 5 minutes.
- In a greased 9×13 inch baking dish, layer noodles, beef mixture, dollops of sour cream, and both cheeses. Repeat the layers, ending with a cheese layer on top.
- Bake uncovered for 25-30 minutes or until bubbly and cheese is golden. Let stand for 5 minutes before serving. Garnish with green onions.
Notes
- For a lighter version, substitute ground beef with ground turkey.
- Add a layer of black beans or corn for extra fiber and texture.
