  • 1 cup cooked seasoned rice
  • 1 cup nacho cheese sauce
  • 1 cup shredded Mexican cheese blend
  • 1 cup refried beans (optional)
  • ½ cup sour cream
  • ½ cup fiesta tortilla strips
  • ½ cup pico de gallo
  • 4 large flour tortillas
  • 1 tablespoon oil


Instructions

  1. Heat a skillet over medium-high heat and cook the ground beef until browned and no pink remains.
  2. Add taco seasoning and water; stir well and simmer until the mixture thickens.
  3. Warm the flour tortillas (in a dry pan or microwave) so they become soft and foldable.
  4. (Optional) If using refried beans, spread a thin layer down the center of each tortilla.
  5. Add a scoop of cooked seasoned rice onto each tortilla.
  6. Spoon a generous portion of the seasoned beef over the rice.
  7. Drizzle warm nacho cheese sauce over the beef, then sprinkle shredded Mexican cheese on top.
  8. Add sour cream and a spoonful of fresh pico de gallo.
  9. Sprinkle fiesta tortilla strips on top for crunch.
  10. Roll each burrito tightly, folding in the sides and rolling from the bottom up.
  11. Heat 1 tablespoon oil in a skillet and pan-sear the burritos on all sides until golden brown and the cheese is melty.
  12. Serve warm, with extra pico de gallo or hot sauce if desired.
