Description

A cozy, moist Soft Apple Cake made with simple ingredients and warm cinnamon spice. Perfect for brunch, tea time, or an easy dessert everyone will love.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 medium apples, peeled and finely chopped
  • ½ cup milk
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Mix in sour cream (or Greek yogurt) and lemon juice until smooth.
  6. Gradually add the dry ingredients, alternating with milk, mixing until just combined.
  7. Fold in chopped apples gently to distribute evenly.
  8. Pour batter into the prepared pan and smooth the top.
  9. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool for 10 minutes before transferring to a wire rack. Dust with powdered sugar before serving.

Notes

  • Use room-temperature butter and eggs for a lighter crumb.
  • Chop apples evenly so they bake uniformly.
  • If top browns too quickly, tent with foil during the final minutes of baking.
  • Best served slightly warm with vanilla ice cream or whipped cream.
