  • 3 large eggs
  • 2 cups milk

  • 1/2 cup grated cheese (Gruyère or mozzarella)
  • 2 cups béchamel sauce


Instructions

  1. In a bowl, combine flour, eggs, milk, and salt to make the crepe batter. Let it rest for 30 minutes.
  2. In a skillet, heat olive oil and sauté onions until translucent. Add mixed seafood and cook until just done.
  3. In a separate pan, heat the melted butter, then pour in the crepe batter to form thin crepes.
  4. Fill each crepe with the seafood mixture and roll them up.
  5. Place the filled crepes in a baking dish, cover with béchamel sauce and sprinkle cheese on top.
