Description
A cozy, creamy French garlic soup made with whole garlic cloves, herbs, broth, and finished with toasted bread and cheese. Rich, comforting, and easy to make in one pot.

- 2 whole heads of garlic (about 20 cloves), peeled
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 6 cups chicken or vegetable broth
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
- 2 large egg yolks (optional)
- ½ cup grated Parmesan cheese (optional)
- 4 slices crusty bread, toasted
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic cloves and onion. Sauté until softened and lightly golden (5–7 minutes).
- Pour in the broth. Add thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes.
- Remove thyme sprigs and bay leaf. Blend the soup with an immersion blender (or regular blender) until smooth and creamy.
- In a small bowl, whisk egg yolks with a few tablespoons of hot soup. Stir back into the pot. Do not boil.
- Adjust seasoning to taste.
- Serve hot with a slice of toasted bread, Parmesan, and chopped parsley.
Notes
- Roast the garlic first for an even sweeter flavor.
- Skip the egg yolks and cheese for a lighter or vegan version.
- Use vegetable broth for a vegetarian-friendly dish.
- Garnish with extra herbs or a drizzle of olive oil for added depth.
