These Rotel Cream Cheese Sausage Balls are warm, cheesy, and a little spicy—perfect for game-day, brunch or a cozy snack with friends. With ground breakfast sausage, cream cheese, cheddar, and a can of Rotel, they bake up into golden bites that disappear fast.

- 2 cups shredded cheddar cheese
- 1 ½ cups Bisquick baking mix
- ½ teaspoon garlic powder
- 1 lb ground breakfast sausage (mild or spicy)
- 8 oz cream cheese, softened
- 1 can (10 oz) Rotel diced tomatoes & green chilies, drained
- ½ teaspoon onion powder
Instructions
- Preheat oven to 375 °F (190 °C). Line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, combine ground sausage, softened cream cheese, drained Rotel, shredded cheddar cheese, Bisquick, garlic powder and onion powder. Mix well until evenly combined.
- Roll the mixture into 1-inch balls and place them on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and cooked through.
- Let cool slightly before serving. Enjoy warm with your favorite dipping sauce!
Notes
- Be sure to drain the Rotel well so the mixture isn’t too wet.
- Use a cookie scoop or tablespoon measure to help roll uniform 1-inch balls for even baking.
- If you raise oven to 400 °F (200 °C), bake time may shorten slightly—watch for golden brown edges.
- Let the balls rest a minute after baking so the cheese centres settle and aren’t too hot to serve.
