Description

Crispy roasted sweet potato rounds topped with creamy whipped feta, fresh herbs, and a drizzle of honey. An easy yet elegant appetizer or side dish with a perfect sweet-savory balance.

Ingredients

Scale
  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil (for whipped feta)
  • Fresh herbs (parsley, dill, or thyme), for garnish
  • Honey or hot honey, optional

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  3. Arrange the slices in a single layer on the baking sheet.
  4. Roast for 20 minutes, flip, then roast an additional 15–20 minutes until golden and tender.
  5. While sweet potatoes roast, blend feta, Greek yogurt, lemon juice, and olive oil until smooth and creamy.
  6. Spread whipped feta onto a serving plate or individual rounds.
  7. Top with roasted sweet potatoes, garnish with fresh herbs, and drizzle with honey if desired.

Notes

  • Slice sweet potatoes evenly for uniform roasting
  • Avoid overcrowding the pan to ensure crispy edges
  • Whipped feta can be made up to 24 hours in advance
  • Best served warm for optimal texture and flavor
