Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
- Arrange the slices in a single layer on the baking sheet.
- Roast for 20 minutes, flip, then roast an additional 15–20 minutes until golden and tender.
- While sweet potatoes roast, blend feta, Greek yogurt, lemon juice, and olive oil until smooth and creamy.
- Spread whipped feta onto a serving plate or individual rounds.
- Top with roasted sweet potatoes, garnish with fresh herbs, and drizzle with honey if desired.
