- 12 egg roll wrappers
- 1½ cups corned beef, finely chopped
- 1½ cups sauerkraut, drained and squeezed dry
- 1½ cups Swiss cheese, shredded
- 2 tablespoons Thousand Island dressing (plus more for dipping)
- 1 tablespoon Dijon mustard
- 1 tablespoon melted butter
- 1 tablespoon fresh parsley, chopped (optional)
- Oil for frying or air frying
Instructions
- In a bowl, combine corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, Dijon mustard, and parsley.
- Lay an egg roll wrapper on a flat surface in a diamond shape.
- Spoon about 2–3 tablespoons of filling in the center.
- Fold in the sides, then roll tightly, sealing the edge with a little water.
- Heat oil to 350°F (175°C) and fry for 3–4 minutes until golden and crispy, OR brush with oil and air fry at 375°F (190°C) for 8–10 minutes, flipping halfway.
- Drain on paper towels and serve warm with extra Thousand Island dressing for dipping.
Notes
- Squeeze sauerkraut thoroughly dry to prevent sogginess.
- Use freshly shredded Swiss for better melting.
- Keep wrappers covered while working so they don’t dry out.
