Description

Golden, crunchy Reuben Egg Rolls packed with corned beef, tangy sauerkraut, melty Swiss, and creamy Thousand Island — a fun appetizer for parties or game days.


Ingredients

  • 12 egg roll wrappers
  • 1½ cups corned beef, finely chopped
  • 1½ cups sauerkraut, drained and squeezed dry
  • 1½ cups Swiss cheese, shredded
  • 2 tablespoons Thousand Island dressing (plus more for dipping)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon melted butter
  • 1 tablespoon fresh parsley, chopped (optional)
  • Oil for frying or air frying


Instructions

  1. In a bowl, combine corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, Dijon mustard, and parsley.
  2. Lay an egg roll wrapper on a flat surface in a diamond shape.
  3. Spoon about 2–3 tablespoons of filling in the center.
  4. Fold in the sides, then roll tightly, sealing the edge with a little water.
  5. Heat oil to 350°F (175°C) and fry for 3–4 minutes until golden and crispy, OR brush with oil and air fry at 375°F (190°C) for 8–10 minutes, flipping halfway.
  6. Drain on paper towels and serve warm with extra Thousand Island dressing for dipping.

Notes

  • Squeeze sauerkraut thoroughly dry to prevent sogginess.
  • Use freshly shredded Swiss for better melting.
  • Keep wrappers covered while working so they don’t dry out.
