A colorful and festive Christmas salad made with fresh strawberries, blueberries, spinach, and a simple balsamic-honey vinaigrette.

- 1 cup cherry tomatoes, halved
- 3 cups baby spinach or mixed greens
- 1 cup cucumbers, sliced
- 1 cup fresh blueberries
- ½ cup feta cheese or mozzarella pearls (optional)
- ¼ cup chopped pecans or walnuts (optional)
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar or lemon juice
- 1–2 teaspoons honey
- Pinch of salt
- Pinch of black pepper
Instructions
- Wash and dry all fruits and vegetables thoroughly.
- In a large bowl or platter, layer the spinach or mixed greens.
- Add strawberries, tomatoes, cucumbers, and blueberries evenly on top.
- Sprinkle feta or mozzarella and chopped nuts, if using.
- In a small bowl, whisk together olive oil, balsamic vinegar (or lemon), honey, salt, and pepper.
- Drizzle the dressing over the salad right before serving.
- Toss gently or serve as a colorful layered display.
