Ingredients

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup raspberry preserves
  • 1 teaspoon vanilla extract
  • 1/4 cup freeze-dried raspberries, crushed
  • 1/2 cup cocoa powder
  • 1/2 cup powdered sugar
  • 1/2 cup finely chopped dark chocolate


Instructions

  1. Place the chocolate chips in a heat-proof bowl.
  2. Heat the heavy cream in a small saucepan over medium heat until just beginning to simmer.
  3. Pour the hot cream over the chocolate chips and let sit for 2 minutes.
  4. Stir until the mixture is smooth and glossy.
  5. Mix in the raspberry preserves and vanilla extract until fully combined.
  6. Cover and refrigerate for 1–2 hours, until firm enough to scoop.
  7. Scoop small portions and roll into bite-size balls.
  8. Roll truffles in cocoa powder, powdered sugar, crushed raspberries, or chopped chocolate.
  9. Place on parchment paper and refrigerate for 30 minutes before serving.
