- 1/2 cup powdered sugar
- 1/2 cup finely chopped dark chocolate
Instructions
- Place the chocolate chips in a heat-proof bowl.
- Heat the heavy cream in a small saucepan over medium heat until just beginning to simmer.
- Pour the hot cream over the chocolate chips and let sit for 2 minutes.
- Stir until the mixture is smooth and glossy.
- Mix in the raspberry preserves and vanilla extract until fully combined.
- Cover and refrigerate for 1–2 hours, until firm enough to scoop.
- Scoop small portions and roll into bite-size balls.
- Roll truffles in cocoa powder, powdered sugar, crushed raspberries, or chopped chocolate.
- Place on parchment paper and refrigerate for 30 minutes before serving.
