For the Pulled Pork:

  • 2 lbs pork shoulder or pork butt
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup chicken or beef broth

For the Grilled Cheese Sandwich:

  • 8 slices bread of your choice
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • Butter for spreading

Instructions

  1. Season the pork shoulder or butt with salt and pepper on all sides.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side.
  3. Remove the pork from the skillet and set aside. In the same skillet, add the chopped onion and garlic. Cook until softened and fragrant, about 2-3 minutes.
  4. Return the pork to the skillet and add barbecue sauce and broth. Bring to a simmer, then cover and reduce the heat to low. Cook for 6-8 hours, or until the pork is tender and easily shreds with a fork.
