- 1 box (12 ounces) crisp corn cereal (like Crispix)
- 2 cups pecan halves
- 1/2 cup (1 stick) unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Instructions
- Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Combine cereal and pecans in a large bowl.
- In a saucepan, melt butter, stir in brown sugar and corn syrup, and bring to a boil. Boil for 2 minutes without stirring.
- Remove from heat and stir in vanilla and baking soda.
- Pour caramel over the cereal mix and toss until evenly coated.
- Spread onto the baking sheet and bake for 1 hour, stirring every 15 minutes.
- Cool completely, break into clusters, and store in an airtight container.
Notes
