Instructions
Prepare the Cake Batter
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine cake mix, crushed pineapple (with juice), vegetable oil, eggs, and vanilla extract.
- Stir until smooth and well combined.
2. Bake the Cake
- Pour the batter into the prepared baking dish and bake for 30-35 minutes.
- Check with a toothpick—if it comes out clean, it’s ready!
- Let the cake cool completely before adding toppings.
3. Make the Pineapple Layer
- In a saucepan over medium heat, melt butter and stir in granulated sugar.
- Add half of the crushed pineapple and simmer for 2-3 minutes.
- Let cool before spreading over the cake.
4. Prepare the Cream Cheese Frosting
- Beat cream cheese and powdered sugar until smooth.
- Fold in whipped topping until light and fluffy.
5. Assemble the Cake
- Spread the pineapple layer evenly over the cooled cake.
- Top with the cream cheese frosting and spread evenly.
- Sprinkle with shredded coconut and pecans (if using).
6. Chill & Serve
- Refrigerate for at least 1 hour before slicing.
