Description

This Pineapple Glazed Salmon is a quick, flavorful dish with sweet and savory notes of pineapple, honey, soy, and fresh lime. Perfect for a tropical-inspired dinner!


Ingredients

  • 4 salmon fillets (6 oz each)

  • 1 cup fresh pineapple chunks

  • ¼ cup pineapple juice

  • 2 tbsp honey

  • 2 tbsp soy sauce

  • 2 tbsp olive oil

  • 1 tbsp garlic, minced

  • 1 tbsp fresh ginger, grated

  • ½ tsp chili flakes (optional)

  • 1 tbsp lime juice

  • Fresh cilantro, chopped (for garnish)

  • Salt and black pepper, to taste


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Blend pineapple chunks, juice, honey, soy sauce, olive oil, garlic, ginger, chili flakes, and lime juice until smooth.

  • Season salmon with salt and pepper. Place on the baking sheet and coat with half the glaze.

  • Bake for 15–18 minutes, brushing with remaining glaze in the last 5 minutes.

  • Garnish with cilantro and serve with rice or veggies.

Notes

  • For extra char, broil for 1–2 minutes at the end.

  • Swap soy sauce for tamari for gluten-free.
