Description
Pina Colada Fluff is a light, creamy, no-bake tropical dessert blending pineapple, coconut, marshmallows, and cherries — quick to prepare and perfect for potlucks or holiday parties.
Ingredients
Scale
- 1 (20 oz) can crushed pineapple, undrained (juice included)
- 1 (3.4 oz) box instant vanilla pudding mix
- 1/2 cup coconut cream
- 1 cup whipped topping (thawed)
- 1 cup shredded sweetened coconut
- 1 cup mini marshmallows
- 1/2 cup chopped maraschino cherries
- 1/3 cup chopped pecans or almonds (optional)
- Extra cherries and toasted coconut for garnish
Instructions
- In a large mixing bowl, add the crushed pineapple with all its juice.
- Stir in the instant vanilla pudding mix until fully dissolved and the mixture begins to thicken.
- Add the coconut cream and mix until smooth and creamy.
- Gently fold in the whipped topping, shredded coconut, mini marshmallows, and chopped cherries.
- If using nuts, fold them in now to keep them crunchy.
- Cover and refrigerate for at least 1 hour (ideally 2–3 hours) to allow flavors to meld and the fluff to firm up.
- Before serving, garnish with extra cherries and toasted coconut. Optionally, add pineapple wedges or mint for extra flair.
Notes
- Use the pineapple juice — it helps activate the pudding and gives the creamy base.
- Toast the coconut before folding in for deeper flavor.
- Add nuts just before serving to keep them crunchy.
- Chop cherries finely and drain excess syrup to prevent the fluff from becoming too watery.
- For a nut-free version, just skip the nuts or replace with extra marshmallows or coconut chips for texture.
