Description

Pina Colada Fluff is a light, creamy, no-bake tropical dessert blending pineapple, coconut, marshmallows, and cherries — quick to prepare and perfect for potlucks or holiday parties.


Ingredients

  • 1 (20 oz) can crushed pineapple, undrained (juice included)
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1/2 cup coconut cream
  • 1 cup whipped topping (thawed)
  • 1 cup shredded sweetened coconut
  • 1 cup mini marshmallows
  • 1/2 cup chopped maraschino cherries
  • 1/3 cup chopped pecans or almonds (optional)
  • Extra cherries and toasted coconut for garnish


Instructions

  1. In a large mixing bowl, add the crushed pineapple with all its juice.
  2. Stir in the instant vanilla pudding mix until fully dissolved and the mixture begins to thicken.
  3. Add the coconut cream and mix until smooth and creamy.
  4. Gently fold in the whipped topping, shredded coconut, mini marshmallows, and chopped cherries.
  5. If using nuts, fold them in now to keep them crunchy.
  6. Cover and refrigerate for at least 1 hour (ideally 2–3 hours) to allow flavors to meld and the fluff to firm up.
  7. Before serving, garnish with extra cherries and toasted coconut. Optionally, add pineapple wedges or mint for extra flair.

  • Use the pineapple juice — it helps activate the pudding and gives the creamy base.
  • Toast the coconut before folding in for deeper flavor.
