Ingredients

  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 2 boneless, skinless chicken breasts, diced
  • 1 cup long-grain white rice
  • 1 ½ cups chicken broth
  • ½ cup honey BBQ sauce
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ cup frozen corn
  • ½ cup black beans, rinsed and drained
  • ½ cup shredded cheddar cheese
  • 2 green onions, sliced
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and season with paprika, garlic powder, onion powder, salt, and pepper. Sauté 5–7 minutes until golden.
  3. Add rice, chicken broth, honey BBQ sauce, corn, and black beans. Stir well and bring to a simmer.
  4. Reduce heat, cover, and cook for 18–20 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat, sprinkle cheddar cheese on top, and cover for 2–3 minutes to melt.
  6. Garnish with green onions and parsley. Serve hot.

Notes

  • Swap chicken with shredded rotisserie for extra speed.
  • Use brown rice, but extend cooking time and liquid slightly.
  • Add jalapeños for a spicy kick.
