This one-pan honey BBQ chicken rice is a bold and flavorful dinner made with tender chicken, smoky spices, sweet BBQ sauce, and melty cheddar—all in just 35 minutes.

- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- 2 boneless, skinless chicken breasts, diced
- 1 cup long-grain white rice
- 1 ½ cups chicken broth
- ½ cup honey BBQ sauce
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
- ½ cup frozen corn
- ½ cup black beans, rinsed and drained
- ½ cup shredded cheddar cheese
- 2 green onions, sliced
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and season with paprika, garlic powder, onion powder, salt, and pepper. Sauté 5–7 minutes until golden.
- Add rice, chicken broth, honey BBQ sauce, corn, and black beans. Stir well and bring to a simmer.
- Reduce heat, cover, and cook for 18–20 minutes until rice is tender and liquid is absorbed.
- Remove from heat, sprinkle cheddar cheese on top, and cover for 2–3 minutes to melt.
- Garnish with green onions and parsley. Serve hot.
Notes
- Swap chicken with shredded rotisserie for extra speed.
- Use brown rice, but extend cooking time and liquid slightly.
- Add jalapeños for a spicy kick.
