Instructions

  1. In a medium bowl, mix crushed chocolate sandwich cookies with melted butter until combined.
  2. Press the mixture firmly into the bottom and sides of a 9-inch pie dish. Refrigerate 20 minutes to set.
  3. In a large bowl, beat softened cream cheese and granulated sugar until smooth.
  4. Add peppermint extract and green food coloring; mix until evenly tinted.
  5. In a separate bowl, whip heavy cream and powdered sugar to stiff peaks.
  6. Gently fold whipped cream into the mint cream cheese mixture until light and fluffy.
  7. Spoon filling into chilled crust and smooth the top.
  8. Refrigerate at least 4 hours or until fully set.
  9. Before serving, garnish with whipped cream, chocolate shavings, and optional cherries.
