Description

A moist and lightly spiced zucchini bread made with grated zucchini, whole wheat flour, and optional nuts or chocolate chips.


Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ½ cup olive oil (or melted coconut oil)
  • ¾ cup cane sugar (or brown sugar)
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Grate zucchini and squeeze out excess moisture.
  3. In a medium bowl, whisk together dry ingredients.
  4. In a large bowl, whisk eggs, oil, sugar, and vanilla.
  5. Fold in the grated zucchini.
  6. Add dry ingredients into the wet mixture until just combined.
  7. Fold in nuts and/or chocolate chips if using.
  8. Pour batter into loaf pan and smooth the top.
  9. Bake for 50–60 minutes or until a toothpick comes out clean.
  10. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use fresh zucchini with skin on for best texture.
  • Don’t overmix the batter to keep the bread moist.
  • Store in an airtight container for up to 3 days or freeze slices.
