Description
A moist and lightly spiced zucchini bread made with grated zucchini, whole wheat flour, and optional nuts or chocolate chips.

- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 ½ cups all-purpose flour
- ½ cup whole wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- 2 large eggs
- ½ cup olive oil (or melted coconut oil)
- ¾ cup cane sugar (or brown sugar)
- 1 tsp vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- ½ cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- Grate zucchini and squeeze out excess moisture.
- In a medium bowl, whisk together dry ingredients.
- In a large bowl, whisk eggs, oil, sugar, and vanilla.
- Fold in the grated zucchini.
- Add dry ingredients into the wet mixture until just combined.
- Fold in nuts and/or chocolate chips if using.
- Pour batter into loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use fresh zucchini with skin on for best texture.
- Don’t overmix the batter to keep the bread moist.
- Store in an airtight container for up to 3 days or freeze slices.
