- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- 1 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup butterscotch chips
- 2 tbsp heavy cream
- ¼ tsp vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- In a large bowl, mix pumpkin puree, oil, brown sugar, eggs, and vanilla until smooth.
- Gradually fold in the dry ingredients until just combined (do not overmix).
- Pour the batter into the loaf pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, melt butterscotch chips and cream over a double boiler until smooth. Stir in vanilla.
- Drizzle the glaze over cooled bread before slicing.
