- 1 cup sour cream
- ½ cup heavy cream
- 1 tablespoon pure vanilla extract
- 1 tablespoon fresh lemon juice
Instructions
- Preheat oven to 325°F (165°C) and prepare a 9-inch springform pan with foil and grease.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar; press firmly into the pan bottom. Bake 10 minutes and cool slightly.
- Beat cream cheese until smooth.
- Gradually add sugar and mix until light and fluffy.
- Add eggs one at a time, mixing on low speed after each addition.
- Blend in sour cream, heavy cream, vanilla, and lemon juice; do not overmix.
- Pour filling over crust and smooth top.
- Place pan in a larger roasting pan with hot water halfway up the sides to create a water bath.
- Bake 60–70 minutes until center is slightly jiggly but edges set.
- Turn off oven, crack door open, and cool 1 hour.
- Remove from oven and water bath and cool completely. Refrigerate at least 6 hours or overnight before slicing.
