Description

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 cup sour cream
  • ½ cup heavy cream
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon fresh lemon juice


Instructions

  1. Preheat oven to 325°F (165°C) and prepare a 9-inch springform pan with foil and grease.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar; press firmly into the pan bottom. Bake 10 minutes and cool slightly.
  3. Beat cream cheese until smooth.
  4. Gradually add sugar and mix until light and fluffy.
  5. Add eggs one at a time, mixing on low speed after each addition.
  6. Blend in sour cream, heavy cream, vanilla, and lemon juice; do not overmix.
  7. Pour filling over crust and smooth top.
  8. Place pan in a larger roasting pan with hot water halfway up the sides to create a water bath.
  9. Bake 60–70 minutes until center is slightly jiggly but edges set.
  10. Turn off oven, crack door open, and cool 1 hour.
  11. Remove from oven and water bath and cool completely. Refrigerate at least 6 hours or overnight before slicing.
