- Salad:
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- Salt and pepper to taste
- Lemon Vinaigrette:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package directions. Rinse with cold water and drain.
- Prepare the vegetables: halve cherry tomatoes, dice cucumber, thinly slice red onion, and slice Kalamata olives.
- In a large mixing bowl, combine cooked orzo, vegetables, and feta cheese.
- In a small bowl, whisk together the vinaigrette ingredients until smooth.
- Pour the vinaigrette over the salad and toss gently.
- Add parsley and basil, toss again, and chill for 30 minutes before serving.
Notes
- Serve immediately or store in an airtight container for up to 3 days in the fridge.
