  • 2 ribs celery, diced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add the sausage, breaking it into crumbles, and cook until browned. Drain excess fat.
  • Add the onion, garlic, carrot, and celery. Sauté until vegetables are softened, about 5 minutes.
  • Stir in the diced tomatoes (with juices), oregano, basil, and red pepper flakes. Pour in the chicken broth and bring to a boil.
  • Add the orzo and cook for 8-10 minutes, stirring occasionally until orzo is tender.
  • Stir in spinach and cook until wilted. Season with salt and pepper to taste.
