  • 1 cup orzo pasta
  • 2 cups fresh spinach, roughly chopped

  • Freshly grated Parmesan cheese, for garnish

Instructions

  • Cook the sausage: Heat the olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up into crumbles as it cooks. Remove any excess fat.
  • Add vegetables: Stir in the diced onion, minced garlic, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.
  • Build the soup base: Add the canned tomatoes (with juices), oregano, basil, and optional red pepper flakes. Pour in the chicken broth and bring the soup to a boil.
