- 1 cup sugar
- ½ cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 cup mashed very ripe bananas (about 2–3 bananas)
- ½ cup sour cream
- 1 teaspoon vanilla extract
- 3 ounces semisweet chocolate, chopped
- 2 teaspoons natural unsweetened cocoa powder
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
- Gradually mix in the dry ingredients until just combined. Stir in mashed bananas, sour cream, and vanilla.
- Melt chocolate and mix with cocoa powder. Combine one cup of banana batter with the chocolate mixture.
- Alternate spooning banana and chocolate batter into the loaf pan. Swirl with a knife.
- Bake for 60-70 minutes or until a tester comes out clean. Cool before slicing.
Notes
- For a vegan version, use plant-based sour cream and egg substitutes.
- To enhance the chocolate flavor, add a tablespoon of espresso powder to the chocolate batter.
