Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 celery stalks, diced
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 pound sea scallops (halved if large)
  • 1/2 pound cooked lobster meat, chopped
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Oyster crackers or crusty bread, for serving

Instructions

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots. Sauté for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add potatoes and seafood stock. Bring to a boil, then simmer for 15 minutes until potatoes are tender.
  5. Stir in cream, milk, smoked paprika, cayenne, thyme, salt, and pepper. Simmer for 5 minutes.
  6. Add scallops and lobster. Cook for 5–7 minutes until scallops are opaque.
  7. Stir in parsley and adjust seasoning.
  8. Serve hot with crackers or crusty bread.

Notes

  • Do not overcook the scallops; they become rubbery.
  • Use cooked lobster to save time.
  • Seafood stock enhances flavor, but chicken stock is a fallback.
  • Garnish with lemon zest for brightness.
