- 1 small onion, finely chopped

- 1 cup heavy cream
- 1 cup whole milk
- 1/2 pound sea scallops (halved if large)
- 1/2 pound cooked lobster meat, chopped
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- Oyster crackers or crusty bread, for serving
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add onion, celery, and carrots. Sauté for 5 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Add potatoes and seafood stock. Bring to a boil, then simmer for 15 minutes until potatoes are tender.
- Stir in cream, milk, smoked paprika, cayenne, thyme, salt, and pepper. Simmer for 5 minutes.
- Add scallops and lobster. Cook for 5–7 minutes until scallops are opaque.
- Stir in parsley and adjust seasoning.
- Serve hot with crackers or crusty bread.

- Do not overcook the scallops; they become rubbery.
- Use cooked lobster to save time.
- Seafood stock enhances flavor, but chicken stock is a fallback.
