- ½ cup breadcrumbs
- 1 egg
- ½ cup ketchup
- ½ cup milk
- 1 tbsp Worcestershire sauce

- ½ tsp black pepper

- 1 tsp onion powder
- 3 cups mashed potatoes (homemade or instant)
- ¼ cup butter (melted)
- ½ cup sour cream
- ½ cup milk (adjust for creaminess)
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 ½ cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 tbsp chopped green onions (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, milk, garlic powder, onion powder, salt, black pepper, and ketchup.
- Press the meat mixture evenly into the prepared baking dish and bake for 25–30 minutes.
- Meanwhile, prepare mashed potatoes by mixing with melted butter, sour cream, milk, garlic powder, salt, and pepper until creamy.
- Remove meatloaf from oven and spread mashed potatoes evenly over the top.
- Top with shredded cheddar cheese and crumbled bacon.
- Bake again for 10–15 minutes until cheese is melted and bubbly.
- Remove from oven, garnish with chopped green onions, and serve warm.
Notes
- You can substitute ground turkey or pork for a different flavor profile.
- Make it gluten-free by using almond flour or gluten-free oats instead of breadcrumbs.
- To make ahead, assemble and refrigerate unbaked for up to 2 days.
