  • ½ cup breadcrumbs
  • 1 egg
  • ½ cup ketchup
  • ½ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 cups mashed potatoes (homemade or instant)
  • ¼ cup butter (melted)
  • ½ cup sour cream
  • ½ cup milk (adjust for creaminess)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 ½ cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp chopped green onions (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, milk, garlic powder, onion powder, salt, black pepper, and ketchup.
  3. Press the meat mixture evenly into the prepared baking dish and bake for 25–30 minutes.
  4. Meanwhile, prepare mashed potatoes by mixing with melted butter, sour cream, milk, garlic powder, salt, and pepper until creamy.
  5. Remove meatloaf from oven and spread mashed potatoes evenly over the top.
  6. Top with shredded cheddar cheese and crumbled bacon.
  7. Bake again for 10–15 minutes until cheese is melted and bubbly.
  8. Remove from oven, garnish with chopped green onions, and serve warm.
