Description

Lemon Zest Jalapeño Shine Jelly is a bright, glossy homemade jelly that balances fresh citrus flavor with gentle jalapeño heat. Sweet, tangy, and lightly spicy, it’s perfect for beginners and ideal for toast, cheese boards, glazes, or gifting.

Ingredients

Scale
  • 2 cups fresh lemon juice
  • Zest of 2 lemons
  • 2 cups water
  • 12 jalapeños, thinly sliced (seeds removed for mild heat)
  • 4 cups granulated sugar
  • 1 box (1.75 oz) powdered fruit pectin

Instructions

  1. In a medium saucepan, combine lemon juice, lemon zest, water, and sliced jalapeños.
  2. Bring to a gentle boil, then reduce heat and simmer for 10 minutes to infuse flavor.
  3. Strain out jalapeños and zest if a smooth jelly is desired, then return liquid to the saucepan.
  4. Stir in powdered pectin and bring to a rolling boil, stirring constantly.
  5. Add sugar all at once and return to a rolling boil for 1 full minute.
  6. Remove from heat and skim off any foam.
  7. Carefully pour hot jelly into sterilized jars, leaving 1/4-inch headspace.
  8. Seal and let cool completely at room temperature until set.
  9. Refrigerate after opening.

Notes

  • Use fresh lemon juice for best flavor and reliable setting.
  • Adjust heat by adding or removing jalapeño seeds.
  • Jelly thickens fully as it cools—do not judge the set while hot.
