Instructions
- In a medium bowl or jar, whisk together chia seeds, milk, yogurt, maple syrup or honey, lemon zest, lemon juice, vanilla extract, and salt until well combined.
- Stir thoroughly to prevent clumping, then let rest for 10–15 minutes and stir again.
- Cover and refrigerate for at least 4 hours or overnight until thickened.
- Once set, stir the chia mixture until smooth and creamy.
- Layer the lemon chia pudding with fresh berries in serving glasses or jars.
- Top with granola just before serving if desired.
- Serve chilled and enjoy.
