- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/3 cup all-purpose flour
- 2 tablespoons chopped chives or green onions

- 1/4 teaspoon black pepper
- Salt to taste
- Cooking spray or oil for greasing
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a mini muffin tin or baking sheet.
- In a large bowl, combine mashed potatoes, cheddar cheese, and Parmesan cheese.
- Add eggs and mix until fully incorporated.
- Stir in flour, chives, garlic powder, black pepper, and salt until a thick batter forms.
- Scoop tablespoon-sized portions into the prepared pan.
- Lightly spray the tops with cooking spray for extra crispness.
- Bake for 18–22 minutes, until puffed, golden, and lightly crisp.
- Let cool slightly before serving.
