  • 1 pound kielbasa sausage, sliced into 1/4-inch rounds
  • 5 medium potatoes, peeled and thinly sliced
  • 1 small onion, finely diced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 2 tablespoons butter, melted
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a large bowl, combine sour cream, cream of chicken soup, melted butter, garlic powder, paprika, salt, and pepper. Mix well.
  • Layer half of the potatoes in the baking dish. Top with half the kielbasa slices and half the diced onion.
  • Spread half the sour cream mixture over the layer and sprinkle with 1 cup of shredded cheddar cheese.
  • Repeat with remaining potatoes, kielbasa, onion, sour cream mixture, and cheese.
  • Cover with foil and bake for 40 minutes.
  • Remove foil and bake for 15-20 minutes until cheese is bubbly and potatoes are tender.
  • Garnish with fresh parsley, if desired, and serve warm.
